Chicken Lo Mein (Better than China Express Down the Street)
Sometimes during the day I don't do what I'm supposed to.
I don't wash the dishes. Or clean the floor. Or pick up toys. Sometimes instead . . . . I blog.
I love to blog.
I love to write down all the crazy thoughts that go on in my head that scare me sometimes.
And probably scare you too. Sorry about that.
The other day I was blogging. I was very serious. Type, type, typing away.
But my kids wanted to play.
But I wanted to blog.
"Calm down." I'd say.
"Quiet please, so Mommy can work."
"Mommy I need this." "Mama, mo yoosh (mommy, more juice)"
And as if I were a broken record, I'd yell "Coming. . ." Knowing full well my bum wasn't moving anytime soon.
"Mommeeeeee, Mommeeeeee. . . .play with us, dance with us. Pleeeeeaaaasssseeeeee."
Ah crap. And because I can be a selfish mommy, though knowingly, I pulled my tookus off the chair mumbling "Okay, okay."
I grabbed Soledad's hand, and then I grabbed little Phoebe's hand, and they in turn took one anothers. A nice little diddy came on the TV, and we danced and danced and giggled and danced.
They got tired and wanted to stop.
"Don't you want to dance some more?" I pleaded.
"No." Said Soledad speaking for herself and her younger sister. "We want to go do something else."
And I was totally bummed, because I had forgotten that dancing is just as fun as blogging.
Another little something that is just as much fun as talking to you. . . . .
Sorry. But I think that might be even more fun than blogging.
Especially when its Chinese Food. Or Japanese Food. Or Vietnamese Food. Or Thai Food.
I think you get the point.
Fun. Fun. Fun. Fun. Fun.
Can I just tell you I made double of the recipe so that we could eat for two days and my family gobbled it up in one night.
That's called CRAZY RIDICULOUS GOOD.
And really it doesn't hurt that it's super healthy.
Healthy and good?
Somebody hit me upside the head with a wok.
Kidding. Don't do that.
That would hurt.
Chicken Lo Mein
Lo Mein refers to how the noodles are cooked. Not actually the type of noodle. Toss them lightly in the sauce for 'Lo Mein' stir fry them for 'Chow Mein'.
For this recipe any type of noodle will do in a pinch. Lo Mein, Chow Mein, Fettuccine, or whatever. All will give superb results. Though my favorite is the Lo Mein noodle, found in the Asian Isle or section of your local grocery.
16 oz. of Lo Mein Noodles ( any noodles will do in a pinch - you could even use fettuccine )
3 TB cooking oil
1 1/2 cups chicken, cut into bite size pieces (about 3/4 pound)
1/2 cup carrots, sliced into bite size pieces
1 cup cabbage, shredded
1 cup zucchini, shredded with a grater
1 celery rib, chopped
1 clove of garlic, diced
Salt and Pepper
1 cup Chicken Broth
3 TB Hoisin Sauce
3/4 tsp sugar
2 tsp corn starch
1. Cook noodles according to package directions.
2. While the noodles are cooking, heat oil in your skillet on medium heat. Add chicken and cook 3-4 minutes, making sure to stir to brown and cook all sides. Add carrot, cabbage, zucchini, celery, scallions, and garlic and continue to cook until vegetables are to your desired texture (I like mine on the softer side of firm which takes about 5 -6 minutes).
3. While vegetables are cooking, in a small bowl combine broth, hoisin sauce, sugar and corn starch. Stir well to make sure the sugar and cornstarch are dissolved.
4. Add the noodles and sauce to the skillet. Stir noodles making sure to coat with sauce. In about a minute, the heat will thicken the sauce. Remove from heat. Serve.
